Banana Pancake Rotee Style

Everybody loves the Thai Banana Pancakes. They are simply the best pancakes ever. But how do they make those delicious treats? At the street stalls it looks not too difficult to make a flat pancake like a pizza man. The dough is different than the dough we use for pancakes. It is not liquid but more like a pizza dough: a Rotee or Roti dough. This dough has it's heritage in India.

I tried to make these yummy pancakes at home and to find a simple way to make them, but it is not possible to make them simple and quick to have the real taste. So take some time and treat yourself with the most delicious streetfood dish. The hardest part is not the preparation of the dough but the technique to flatten the pancakes.

Recipe for 6 pancakes:

250 g all purpose flour
55 ml water
1 egg
1 tbs coconut milk (or 1 tbl butter)
1 hint of salt

Bananas
Chocolate / Nutella
Sweetened condensed milk

Oil

How to make

1. Combine flour, water, egg, coconut milk and salt with a kitchen aid or similar machine until you get a softdough.

2. Set aside for 30 minutes

3. Make 6 to 7 balls out of the dough

4. Now you have to spread the dough to a pancake that is very very thin. In Thailand they use a very fine technique for it and it looks very easy. I always try to flatten the dough my hands and maybe a large glass that I use like a rolling pin. You can also put som oil onto the surface to handle it better.

4. Heat oil in a pan and put the pancake into the hot oil. It will soon get some bubbles on the surface. Then you can put the sliced banana into the middle and close the pancake, maybe turn it so it gets a light brown colour on both sides. It is ready real quick.
